This week's recipe post is my Grandmother's request for beets. I wanted to try something different. This is a fairly basic recipe.
2 medium size organic beets
4 potatoes if on the small side OR 2 medium size (Red-Sweet Potato-or white if you prefer)
The Drizzle Mixture
6 TBSP of coconut oil or your fave butter
2 TBSP of Garlic
1TSP of Oregano
1 TSP of Rosemary
1/4 TSP of lemon
Wash the beets and peel them. Cut off the root and top. Wash and peel the potatoes.
Slice the beets and potatoes into 1/4 to 1/2 inch thick slices or circles. Depending on the size of your beets you may desire to cut the circles into halves.
In a separate bowl, melt your coconut oil. Mix your garlic, rosemary, thyme and lemon together.
In your 9 or 10 inch round baking dish. Place your beets and potatoes alternating stacks (2-5 in each stack) into a nice circle.
Pour the drizzle mixture over your beets and potatoes evenly.
Sprinkle with Himalayan pink salt and black pepper.
Place in the oven uncovered.
Let roast for 35 minutes.
Remove and sit on top of stove for 10 minutes before moving to platter to serve.
