Love your veggies! Try this quick recipe for your next squash and zucchini dish. After cleaning the zucchini and yellow squash very well. Set oven to 420 degrees. Slice the ends off and slice the zucchini and squash in halves. Depending on the length you may desire to cut again.
Place skin side down in pan.
Lightly drizzle organic coconut oil.
Sprinkle lightly the Himalayan Pink Salt
Sprinkle lightly oregano, rosemary, and pepper.
Slice thinly the garlic cloves and place at least two per slice. More if desired.
Place in oven; uncovered.
Cook for 30 minutes.
Let stand for 10 minutes.
