Hello my friend! I'm excited to present this recipe post from my Supplemental Sips Series today. When I was shopping at Whole Foods the other day, I came across the unique looking fruit. You don't see a pink colored fruit often. What is a Pitaya? Pitayas is a tropical fruit indigenous to Central America. Underneath its vibrant fuchsia skin with lime green peak is a white or pinkish center with edible seeds (small as chia seeds) full of antioxidants, protein, fiber, calcium, iron and other vitamins to nourish your body. Dragon fruit is said to provide digestion and cardiovascular benefits. You can read more about the benefits here. What adds to the uniqueness of the Pitaya is how it grows. It is a nocturnal flowering plant. The beautiful aromatic flower blooms for one night before wilting and producing the Dragon Fruit. Happy Sipping! Ingredients: How to Prepare: 1 Organic Seeded Banana (frozen or fresh) 1) Add Coconut Milk to blender. 1/2 cup of Organic Blueberries (frozen or fresh) 2) Cut Dragonfruit in half. Scoop out the meat from the skin of the Dragonfruit. Add to blender. Discard skin. 1/2 cup of Coconut Milk or Water 3) Add remaining ingredients. 1 TBSP of Chia Seeds (ground) 4) Blend well. 1 Dragonfruit 5) Pour and Serve. 1/2 cup of Pineapple (frozen or fresh)
