Key Lime Pie Goodness

Good desserts just help to make busy weekends and nights rewarding. Well, for this holiday season I wanted to try out a NEW dessert. Well the kitchen was buzzing with ideas and after a while of discussion we agreed on making a Key Lime Pie. Here's how it all came together.

First we will make the pie crust. Our first easy step with only three ingredients! 

2 Cups of nuts (1 cup of pecans and 1 cup of walnuts)
1.5 Cups coconut flakes
3 cups pitted dates (remove the pits)

  • Blend all of these things in a food processor. Press the mixture into your pie pan(s).  Set to the side.

The Filling

5 avocados (peeled and pitted)
2 cups lime juice (fresh as you can get it!) (we squeezed our limes)
1 – 1 1/2 cups agave nectar (light, not dark)
1 tsp of lime zest
1 TBSP coconut oil 
Make sure to remove the pits and carefully remove your avocado meat. The Coconut oil helps to retain the pie firmness. I wouldn't go pass 2 TBSP of coconut oil. The more you add your pie will take on more of a coconut taste.

Blend well until you've achieved a smooth, pudding consistency.

Yea, we was having "fun" squeezing limes.

Pour the mixture into your molded pie pans. Sit in the refrigerator for 30 minutes. Afterward, add your garnish. Keep refrigerated until ready to serve. Did we mention that this was a NO-BAKE Key Lime Pie? Yeeeaaaaa buddy! 

Well this dazzled the taste buds for the key lime lovers. We're back on the hunt for another recipe to test in the kitchen. Stay tuned!
