I NEVER MADE ZUCCHINI bread before! Well, it only took me like 30 minutes to get it all together and within an hour the results were beautiful.
Preheat oven to 350 degrees F.
Grease and flour dust two 5x9 inch loaf pans.
In a LARGE bowl beat 3 eggs together then add 1 cup of olive oil, 2 cups of sugar and 2 teaspoons of Vanilla. Beat until mixture is thick and foamy. Now with a spoon, just stir in 2 cups of coarsely grated zucchini and 8 ounces of freshly crushed pineapple.
Now its time to mix up the dry ingredients. In a medium size bowl, combine 3 cups of flour, 2 teaspoons of baking soda, 1 teaspoon of salt, 1/2 teaspoon of baking powder, 1 and a 1/2 teaspoons of cinnamon, and 3/4 teaspoon of nutmeg.
Okay now a little at a time, add the dry mixture into the bowl with the wet mixture. Slowly stirring as you add.
Last but not least, add 1 cup of chopped walnuts and 1 cup of raisins. Finish mixing until well blended.
Divide the batter between the two pans. Bake for an hour. Test with a wooden toothpick (pick comes out clean if well done). Cool in pans for at least 10 minutes.
